Convert the dial, then consider the fan

The page first converts Fahrenheit to Celsius with (F − 32) × 5 ÷ 9. When convection mode is selected, it then subtracts 15°C as a cautious starting adjustment. That second step is a convention for fan ovens, not a law of heat transfer or a replacement for a recipe’s own fan instruction.

From 350°F to a fan-oven starting point

350°F converts to 176.7°C. With the default convection selection, subtracting 15°C gives about 161.7°C, shown practically as 162°C. If the oven only offers marked settings, 160°C is a reasonable starting mark before checking the food’s actual progress.

Why fan conversion is only a guide

Air movement changes surface drying and browning, but ovens differ in fan strength, thermostat cycling, and shelf heat. Cookies on two trays can colour unevenly despite an exact dial calculation. Rotate trays only if the recipe permits it and rely on its doneness cues rather than the display alone.

Do not trade temperature for time mechanically

A 15°C fan reduction does not authorize a proportional change to the bake time. Food thickness, pan material, moisture, and load determine how quickly the centre cooks. Start checking before the stated finish time where the recipe advises and use a reliable doneness test.

Conventional and fan recipes should stay labelled

Keep the original temperature and the selected oven mode in the recipe notes. A later cook can then distinguish “175°C conventional” from “160°C fan” instead of assuming a number lost its context. This avoids repeatedly applying a convection adjustment to a setting that already included one.

Limit of this calculation

Use it for Fahrenheit oven recipes when choosing a conventional or fan-oven starting setting. It is not a conversion for air fryers, microwaves, grill functions, or safety-critical heating instructions. Manufacturer guidance and measured food temperature take precedence over a dial estimate.

Start with the recipe author’s oven mode

If a recipe already says fan, use its stated fan temperature rather than subtracting 15°C a second time. If it says conventional, the displayed fan guide supplies a first trial only. Labelling the oven mode on a copied recipe avoids one of the commonest conversion mistakes: applying an adjustment to a number that was already adjusted.

Keep conventional and fan tests separate

The same 350°F recipe can produce two starting notes: about 175–180°C conventional and about 160°C fan after the displayed adjustment. Test one mode at a time; switching modes halfway through obscures what changed. If a recipe author already specifies fan temperature, use that stated number rather than converting the Fahrenheit label and subtracting again. The page offers a starting convention only when the recipe has not supplied its own mode-specific instruction.

Fan circulation changes surface conditions first

Moving air can dry a surface and speed browning before the centre has reached the same state. Thin biscuits, meringues, and exposed pastry may therefore need closer visual checks than a covered casserole. Pan position and the number of trays also alter circulation. The 15°C subtraction is not a promise that every food needs the same time or that every shelf receives the same heat.

Use a repeatable oven note

After a successful bake, write the original recipe setting, the selected oven mode, shelf position, pan material, and observed finish time. “160°C fan, middle shelf, light pan” is evidence another cook can test. “Lowered the heat” is not. This record helps separate a genuine convection adjustment from a change in pan, load, or oven calibration on the next bake.

Use shelves and pans as stated inputs

A recipe tested on the middle shelf in a light pan may not behave the same on a lower shelf in a dark pan, even after an accurate Fahrenheit conversion and fan adjustment. The lower position can receive stronger bottom heat, while dark surfaces absorb more radiation. Keep these choices stable for the first conversion trial. If a change is necessary, note it as a separate reason for a different result.

Do not convert internal targets with an oven rule

The fan adjustment belongs to an oven environment, not to a food temperature measured at the centre. A recipe or safety instruction that names an internal Fahrenheit temperature needs ordinary Fahrenheit-to-Celsius conversion without subtracting 15 degrees. Mixing those two contexts can set an internal target too low. Identify whether a number refers to the appliance air or the food itself before calculating.

Check an oven across several settings

An oven thermometer check at only one setting may not reveal how the appliance cycles elsewhere. USDA appliance guidance suggests comparing the selected and observed temperatures at several common settings when accuracy is in doubt. If the oven is consistently offset, note the observed correction separately from the Fahrenheit conversion. A changing or erratic offset is an appliance problem, not evidence that the conversion formula should be altered.
