Why cups cannot be converted to grams without naming the ingredient

A recipe calling for 2 cups of flour cannot be converted from volume alone. If its stated flour reference is 120 g per cup, the calculation is 2 × 120 = 240 g. A different flour, a compacted scoop, or a different cup convention can produce another mass. The cups-to-grams calculator therefore asks for grams per cup rather than pretending one universal factor exists.

Worked example with numbers

Density is mass divided by volume. Liquids with a known density can be calculated from millilitres, but dry ingredients also change when they settle, are sifted, spooned, packed, or chopped. A volume cup is useful for a repeatable household method; a kitchen scale is more direct when dough hydration, baking balance, or nutritional quantity matters.

How to make the calculation

Write the exact ingredient beside the conversion: “all-purpose flour, 120 g/cup” conveys an assumption that “2 cups = 240 g” hides. Then use the same system for the whole recipe. A US cup, metric cup, and manufacturer scoop can differ in volume. Do not silently substitute a mug, a teacup, or a rice-cooker cup for a recipe cup.

Check the units and assumptions

Do not convert 250 g to “one cup” without an ingredient name. Do not use water’s approximate density for oil, honey, cocoa, or flour. Another error is mixing grams for one author’s packed brown sugar with a loose-scoop method from another author; both numbers can be honest yet describe different preparation.

Common mistakes

Ingredient-specific conversion is an estimate unless the recipe author gives a tested weight. It cannot make an unfamiliar regional cup standard identical to a U.S. recipe, and it cannot correct a scale that has not been tared. For food safety, allergens, or medical diets, use the label and a reliable scale rather than a generic conversion table.

When this result does not apply

The U.S. Department of Agriculture’s FoodData Central documentation describes food portions and their gram weights as data associated with particular foods. That ingredient-specific approach is the reason a universal cups-to-grams factor would be misleading.
