For 500 g flour, 60% hydration is 500 × 0.60 = 300 g water. At 70%, use 350 g water; at 80%, use 400 g water. The 80% dough has 100 g more water than the 60% dough, which is not a small adjustment. If a 100%-hydration starter adds 50 g flour and 50 g water, count those in both totals before calling a dough 70% or 80%.
Worked example with numbers
Use a percentage as a formula label: hydration equals water ÷ flour × 100. Weigh both ingredients, calculate the baseline, and change water by a known amount on the next bake. The dough hydration calculator makes the arithmetic visible. A 10 g water change in a 500 g flour dough is 2 percentage points, because 10 ÷ 500 × 100 = 2.
How to make the calculation
At 60%, many white-flour doughs feel firmer and can be easier to shape. Around 70%, the same flour may feel more extensible and sticky. At 80%, handling can require folds, wet hands, or a pan, and whole-grain flour may absorb water differently. These are observations, not universal grades: a strong bread flour, rye-rich dough, or enriched dough can behave very differently at the same percentage.
Check the units and assumptions
Do not say that 80% is automatically better than 60%, or that a particular hydration guarantees large holes. Do not compare a total-dough number with a number that omitted starter water. Do not add flour during shaping without recording it, then keep quoting the original percentage. Do not treat a slack dough as failed before considering fermentation, flour choice, mixing, temperature, and the recipe’s intended shape.
Common mistakes
Hydration is only one baker’s-percentage variable. It does not set salt percentage, fermentation schedule, loaf volume, oven spring, or food safety. A recipe may deliberately use lower hydration for bagels or higher hydration for ciabatta, but the appropriate target belongs to that recipe. Use a familiar flour and a small adjustment when learning; a number from another formula is not an instruction to force the same texture.
